Alma
(1889-1972) was my grandmother. Remember those tastes and smells coming out of
your grandma's kitchen? To this day I've never been able to duplicate her
pancakes!
1 quart scalded milk
1 cup lard
1 cup sugar
1 cup mashed potatoes
1 pkg yeast, dissolved in a small amount of warm milk
Flour
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons salt
Mix milk, lard, and sugar. Add yeast when the mixture is lukewarm. Then add enough flour to form a soft dough. Let rise two hours. Add soda, baking powder, and salt and knead as for bread, leaving dough moderately soft. Roll 1" balls and put 3 in a muffin pan and let them rise till doubled in size - about one hour. Bake at 350 degrees for about 10 minutes.
Linda remembers that we could take them out and freeze and then brown them later as brown and serve biscuits.
2 1/2 cups sugar
1 cup shortening
2 eggs
2 cups sour milk (use natural sour milk, or mix 2 cups milk with 3 Tablespoons
lemon juice)
3 cups flour
6 tablespoons cocoa
2 teaspoons soda
2 teaspoons cinnamon
2 teaspoons vanilla
Pour into greased, floured flat cake pan. Bake at 350 degrees, approximately 45 minutes. Cool, then add favorite icing -- if you can wait that long! P
Grandma's Meatloaf
This is ABSOLUTELY the best meatloaf ever. It's also great cold, sliced for
sandwiches.
2 pounds ground beef
1 pound ground pork or sausage
1 cup cracker crumbs
1 cup ground potatoes
2 eggs, beaten
1 onion, chopped
Salt, Pepper
Catsup, chili sauce, or tomato sauce
Add ingredients in order given. Make into loaf and bake at 325o for 2 to 2 ½ hours. 30 minutes before removing from oven, spread catsup, chili sauce, or tomato soup on top of meatloaf and garnish with slices of green pepper.
